Diabetic vanilla cake

- 4 tablespoons sugar free coconut milk
- Half tablespoon extract of coconut
- 8 Ounces fats free cream
- 2 cup frozen, thawed for dessert chopping
- 2 tablespoon honey
- Half tablespoon grounded ginger
- 2 pinches of ground cardamom
- 2 cups chopped fresh fruits according to your choice
- 4 tablespoons sugar free flaked coconut
Prepare vanilla milk in a saucepan by combining ¾ cup fat-free milk with half cup butter and add the vanilla seeds into the milk. Heat the mixture until butter is melted. Don’t forget to make it on low flame and do not boil it. Remove vanilla seeds after preparing this mixture.
Then preheat oven to 350°F meanwhile add 3 cup sugar and beat 3 eggs into another pan and heat it until it became thick and yellow in colour, add 3 cups of all-purpose flour, 3 teaspoons baking powder and 1/2 teaspoon salt . Mix it well and Beat on low to medium just until combined.
In an oven pan, add both the better and half vanilla milk along with 3 tablespoon vanilla and beat it until combined. Spread evenly and bake it for 25 to 30 minutes. After baking, check it with a toothpick to confirm it is fully baked. If a toothpick is removing clean, then no need to bake it more. Just cool it for 10 minutes.
After that, beat 8 ounces fat free cream with left vanilla milk until smooth. Also add 4 tablespoons sugar free coconut milk, Half tablespoon coconut extract and 2 cup frozen thawed for delicious taste. Stir together honey, ginger and cardamom in a bowl.
Lastly, on a cake platter, place one cake layer and spread Coconut Cream Frosting, repeat 2 layers and top fresh fruits with honey mixture. Moreover, you can sprinkle flaked coconut over the topping for a delicious treat.
